Description

Quick, easy and ridiculously delicious! This creamy dip will have your friends begging for the recipe.

Ingredients

  • 1 pound Feta Cheese, Crumbled
  • ½ pounds Whoe Milk Ricotta
  • 2 cloves Garlic, Smashed
  • ⅓ cups Olive Oil, Plus 1 Tablespoon To Drizzle On Top
  • 1 whole Lemon, Juiced
  • 1 Tablespoon Fresh Chopped Thyme
  • 1 Tablespoon Dried Oregano
  • 1 teaspoon Crushed Red Pepper
  • 1 whole Large Roasted Red Pepper (jarred Is Fine)
  • Ground Black Pepper To Taste
  • Kalamata Olives For Garnish
  • Pita Chips, To Serve

Preparation

Using a food processor, pulse the feta, ricotta, garlic, 1/3 cup oil, lemon juice, herbs and crushed red pepper together until smooth.

Drain and dice the roasted red pepper.

Scoop the mixture into a bowl. Fold in the red pepper and ground black pepper. Refrigerate until ready to serve.

To serve, drizzle the remaining tablespoon of olive oil on top and garnish with olives. Serve with pita wedges.

Decent alternative to hummus. Definitely spicy. I halved the recipe, but still added the whole pepper. A pound of feta would have been about $13. :(
