A tender baked meatball made with ground chicken, wing sauce and blue cheese crumbles.
Preheat the oven to 400 F
In a large mixing bowl, combine ground chicken, egg, wing sauce, bread crumbs and cheese. Using your hands, mix all ingredients until well combined.
Using a food scale, weigh the meatball mixture into 1.5-ounce portions (or just eyeball it—they should be about the size of a golf ball). Roll into a ball and place each meatball into a hole in a mini muffin tin.
Bake for 20 minutes or until golden and cooked through. Then remove them from the oven and let them cool. Use immediately or freeze for future use.
