Description

Cinnamon spiced quinoa and caramelized Honeycrisp apples with Greek yogurt.

Ingredients

  • 1 whole Apple, Chopped
  • 1 Tablespoon Brown Sugar
  • ½ Tablespoons Cinnamon, Divided Use
  • ½ teaspoons Nutmeg, Divided Use
  • ½ teaspoons Salt, Divided
  • ¼ cups Dry Quinoa
  • 1 cup Greek Yogurt
  • Optional Toppings: Cinnamon, Honey

Preparation

Preheat oven to 375F.

Combine chopped apple, brown sugar, 1/4 tablespoon cinnamon, 1/4 teaspoon nutmeg and 1/4 teaspoon salt in an oven safe dish. Roast apples until soft and caramelized, about 15-20 minutes.

Combine dry quinoa with remaining cinnamon, nutmeg and salt. Cook according to the quinoa package directions.

When apples and quinoa have cooled (not completely, but they shouldn’t be scalding) layer them in a glass with Greek yogurt. If desired, mix yogurt with cinnamon and honey for topping.

tali212 – quinoa usually comes “dry” (like rice) and then it cooked. I specified it in dry terms so it could be measured and cooked more easily for the recipe!

I think next time I’ll just saute the apples with the spices and definitely mix the yogurt with the honey or buy honey yogurt. Overall, not bad and an easy recipe to personalize!

The apples are definitely a 5, but I really really tried to love the spiced quinoa but it still needed a little more something. We will still make this again bc it is so healthy and sweet.
