Description

This warm spicy spinach dip full of flavor and cheesy goodness. It is a great addition to any football party, holiday gathering or family get together. Great served with bread, chips or crackers.

Ingredients

  • 1 box (10 Oz. Box) Frozen Chopped Spinach
  • 2 packages (8 Oz. Package) Cream Cheese
  • 1 Tablespoon Cilantro, Chopped
  • 1 whole Onion, Medium, Chopped
  • 1 can (10 Oz. Can) Rotel (Chopped Tomatoes And Green Chiles)
  • 2 cups Monterey Jack Cheese, Grated, Divided
  • 1 Tablespoon Red Pepper Flakes (optional)

Preparation

Thaw chopped spinach and discard excess water. In a large mixing bowl, combine cream cheese, cilantro, chopped onion, Rotel, spinach and half of the Monterey Jack cheese. Mix until creamy.

Place in a 9-inch greased deep dish pie plate. Top with remaining cheese on top and sprinkle with red pepper flakes, if using. Bake at 400 degrees for 30 minutes or until top is golden brown.

Serve with tortilla chips, bread slices or crackers.

I just might have to make this on Saturday. My husband and daughter won’t touch spinach with a 10 ft. pole, but we are having company, and I know it would go over big!

Oh this looks so tasty! I love spinach dip and make it for my guests, this recipe has just a little kick to it. I will be trying this next time for sure! :)

I’m not usually a fan of spinach dips, but had this at a friend’s house and it is excellent.

I made this for our get-together and the spinach lovers in the group loved it. The only change that I will have to make in future is to scale back the cooking time to about 25 minutes. At 30 minutes, the cheese on the top had become brown and leathery and made it difficult to dip a cracker in the dip underneath.

I made this last night for a party and everyone loved it! I used low fat cream cheese and omitted the red pepper flakes (to accommodate all the kids in the group), and it turned out great. I will definitely make it again.
