OMG! It’s a keeper! I have made this several times and shared a link to the recipe with several of my friends. My ‘guys’ have requested ‘spicier’ so I have added fresh jalapenos with great results. Thanks for sharing!

oh, yes. this will make you very popular at potlucks and family gatherings! i made this and it is YUMMO!! do not be afraid of the jalapenos. it is not spicy. fantabulous with tortilla chips or fritos.

Yum! Delicious! I cut the recipe in half for just 2 of us. I’ve made this recipe multiple times. Everyone loves it!

I also loved this dip; it made the food blog. I made it for a recent barbecue and the very large amount all got eaten. I agree with Jna: do not be afraid of the jalapenos. The other ingredients cut the heat very well!
I substituted the red bell pepper for half of a sweet onion (I forgot to get a pepper at the grocery) and used one less can of corn.

I made this last weekend to bring to a party and everyone loved it! It made quite a bit, but almost all of it was gone at the end of the night. I used one less can of corn, and added some lime juice as a few of the comments suggested. I served it with the suggested Lime chips as well and I think those are a must for this dip. Delish! I will be making this again this weekend for a Memorial day party!

Making this again for the weekend. Everybody loves it! It is so good, you could just eat it with a spoon! Best of all, my husband likes to make it. So, I can just enjoy!

LOVE, LOVE, LOVE this! It makes a ton, but almost always is finished when I make it for a group.

This is delicious, although I did make some alterations:
- add lime juice
- use fresh jalapenos (finely diced) instead of canned for more zip
- add quite a bit of salt
I’m not convinced that the cheese and sour cream are even necessary, but I used them anyway. We used leftovers in omlettes – delicious!
Will be making it more this summer! Thanks!

This is such a great dish. So easy and so flavorful! I have made this for an easy cool dinner, and as a party dish. I’m making it again for a pot-luck at work tomorrow (about time I found a decent excuse to make this again!). It really is a crowd pleaser – especially when you have a lot of vegetarians in the group.

This looked so yummy on PW that I had to try it…divine. It is so good warm, too – I microwaved a batch. Whole new taste thrill!!

This is FABULOUS! Absolutely one of my favorite recipes that I have tried from this site. It makes a TON though so my only complaint would be that it’s not an easily halved recipe. Still. MMMmmmmmm so good!

I made this for New Year’s Eve and we really liked it. It made a TON! It definitely needs salt and pepper and I also added some cumin. I will make this again for Superbowl, it’s very substantial!

Ok, marry me! Please? This is fantastic (I used kidney beans and fresh Jalapenos and served it as a relish-y topping for shredded beef burritos – ohhhh my!).

I’m going to make this tonight… just wondering why you need to tip the bowl on its side? I don’t get that step.

after reading the reviews I’m going to add cumin, lime juice and salt, and less corn. Hopefully that’s not a mistake. LOL

I made this for my brother’s birthday and it was a recipe that received oohh’s and aahh’s and requests for copies. I took it as a salad, and added 2 cans of drained water chestnuts, and a can of artichokes, in brine and drained. Very delicious!

oh.my.cow. i made this this morning so that it would have time to marinate before this evening’s festivities, and i’m having a very hard time keeping away from its yumminess! i forgot i needed the red bell pepper i had in the house and used it before today, so i subbed a can of diced tomatoes with jalapenos. i thought i’d drained this enough, but it still oozed liquid, so be sure to follow karenpie’s directions. the result will be less soupy stuff.
this makes a TON, but i don’t think we’ll mind having leftovers. at least i hope we’ll have leftovers. thanks for sharing, karenpie!

Hey cindykeery – you tip the bowl on its side because there’s a lot of liquid that accumulates in the bottom of the bowl. Seriously. Even after you drain the cans of corn, chilies and jalapenos – and I use a strainer – it still pours out. SO, put all that in the bowl first, tip the bowl on it’s side while you dice and chop the rest of the veggies. Periodically drain the bowl during your prep. You’ll be glad you did!
