Description

A really tasty salsa! Scoop onto a tortilla chip or use as a side with chicken or beef.

Ingredients

  • FOR THE SALSA:
  • 1 can (15 Oz. Can) Black-eyed Peas, Drained And Rinsed
  • 1 can (15 Oz. Can) Black Beans, Drained And Rinsed
  • 1 can (15 Oz. Can) Whole Kernel Corn, Drained
  • 2 whole Large Tomatoes, Seeded And Diced
  • 1 whole Medium Onion, Diced
  • 1 whole Medium Green Bell Pepper, Diced
  • 3 Tablespoons Minced Garlic, About 8 Cloves
  • ½ cups Chopped Cilantro
  • 1 whole Jalapeno Pepper, Seeded And Finely Chopped
  • 1 Tablespoon Fresh Lime Juice
  • 1 teaspoon Italian Seasoning

  • FOR THE DRESSING:
  • 1 package (0.7 Oz. Packet) Dry Italian Dressing Mix
  • ½ cups Extra Virgin Olive Oil
  • ½ cups Vinegar
  • 1 teaspoon Kosher Salt

Preparation

Combine all the salsa ingredients in a large bowl. Stir well. Combine dressing ingredients. Pour over the salsa mixture. Stir well. Chill for at least 2 hours. Serve with tortilla chips.
