Description

Soft, gooey caramel covered popcorn!!

Ingredients

  • 2 bags Microwave Popcorn, Popped According To Package Instructions, 3 Ounce Bags
  • 1-¼ cup Brown Sugar, Firmly Packed
  • ½ cups Light Corn Syrup
  • ½ cups Butter
  • 1 dash Salt
  • 7 ounces, fluid Sweetened, Condensed Milk
  • ½ teaspoons Pure Vanilla Extract

Preparation

*Safety: Make sure to sift out the unpopped kernels of popcorn after you pop it.

Once you’ve popped the popcorn, put it into a large bowl and set aside.

Combine in a medium sauce pan: sugar, corn syrup, butter, and salt. Bring to a boil, and then reduce to medium heat. Stir in sweetened condensed milk, and bring to a soft ball stage (you can use a candy thermometer if you have one).
Remove from heat and stir in vanilla. Pour the caramel mixture over popcorn and mix and fold it in. You can spread it out on a sheet of wax paper to let the mixture dry a bit, if you like.

Sounds yummy! My mom use to make this, but I lost her recipe. Glad to see yours, I will be giving this a try. Mom would put the popped corn in a paper bag and pour the mixture on the popcorn and shake until dry. It works great, give it a try.

I did not use micro popcorn, but made 2 batches in my electric stir popper, and had caramel left over. This easily would have covered a small third batch as well, it made a lot of caramel. Very delicious, my teenager stood at the stove and ate right there, right out of the pan, before I could get it onto the popcorn. I did not make this into balls, but it could easily be done, great consistancy. Thanks!

Love love love this recipe. Easy to make and tastes delish. We added some toasted almonds because we like it that way.
