Description

Nothing is better than salsa. It’s really such a simple dish, but there are so many variations! The best part: virtually calorie and fat free.

This is an Italian salsa. It can also be served as an appetizer with pasta chips, as a bruschetta topping, or on pasta, or with grilled chicken or fish … the possibilities are endless. Only 45 calories and loads of antioxidants per serving!

Ingredients

  • 1 whole Red, Yellow, Or Orange Bell Pepper, Roasted (see Below), Seeded And Chopped
  • 2 teaspoons Olive Oil
  • 4 whole Roma Tomatoes Seeded And Chopped
  • ¼ cups Red Onion, Finely Diced
  • ¼ cups Chopped Fresh Basil
  • 2 Tablespoons Balsamic Vinegar
  • 1 clove Garlic, Pressed And Minced
  • 1 teaspoon Salt

Preparation

Roasting the pepper: Rub pepper lightly with olive oil. Place pepper on a hot grill over medium-high heat. Turn every 4-5 minutes until all sides are charred. Remove from grill and allow to cool for handling. Peel away charred skin, leaving a few pieces of char for color. Remove stem and seeds and chop.

Salsa: Mix all ingredients in a medium bowl. Refrigerate for about 1 hour prior to serving.

this was really good. It will probably be amazing during the summer when the tomatoes are fabulous. I do have to say that I used a roasted red bell pepper from the jar (because it is what I had on hand).
I made it to top mahi mahi but loved it over our side of bbq grilled zucchini (cut in to 3rds lengthwise, seasoned with a little olive oil, pepper/salt/garlic powder diced over quinoa with some crumbled feta.
I think it would be really good over chicken.
