Description

Fresh salsa, just like you wished yo’ mama would have made.

Ingredients

  • 24 whole Roma Tomatoes, Diced
  • 2 whole Medium Onions, Chopped
  • 12 cloves Garlic, Minced
  • 2 whole Jalapeno, Seeds And Membranes Removed, Finely Diced
  • 1 bunch Cilantro
  • 2 whole Limes, Juiced
  • 2 Tablespoons Garlic Salt, Or To Taste
  • 2 Tablespoons Salt, Or To Taste
  • 2 Tablespoons Maple Syrup

Preparation

Chop tomatoes, and send through the food processor. Repeat with onions, garlic, jalapeno and cilantro, making sure to chop all ingredients well… no one wants to take a big bite of fresh garlic!

Juice the limes (warm limes produce more juice) and add to the mix. Add salt, garlic salt and maple syrup and stir well. Now take a deep breath. You’re done!

Serve with tortilla chips or anything that floats your boat.

This is the best Salsa I’ve ever made or tasted. Well worth the trip to the grocery store, the peeling of garlic and the tears from onions. I made half a batch simply because I couldn’t think of what to store a larger batch in.

This is very similar to my recipe, but I’ve never tried maple syrup (usually use just a little sugar). I’ll have to try it!
