Preheat oven to 375 F. Line a baking sheet with a Silpat mat or parchment paper.
Place almonds on the baking sheet and roast for 10 minutes total but give them a toss after 5 minutes.
Meanwhile, in a small saucepan over medium heat, melt honey and brown sugar until sugar is dissolved and mixture is hot.
Remove almonds from oven and pour honey mixture over nuts. Give it all a good toss. Now sprinkle on the sesame seeds making sure the nuts are well coated in sesame seeds. Bake for 5-10 minutes more until almonds are toasted.
Allow to cool complete before storing them in airtight containers. Enjoy.
