A low fat alternative to the typically fried Nigerian staple.
Preheat oven to 400F.
Peel and cut the plantains in half lengthwise and crosswise so you get 4 pieces from 1 plantain.
Arrange on a baking tray and season with salt, spray with PAM and roast for 40 minutes until golden brown.
Great as a side with chicken, spicy beans or spinach. Anything really!
