Description

This easy appetizer recipe makes a wonderful, bite-sized puff of yumminess.

Ingredients

  • 4 ounces, weight Cream Cheese, Softened
  • ½ cups Sour Cream
  • 3 Tablespoons Red Onion, Finely Chopped
  • 3 Tablespoons Roasted Pepper, Finely Chopped
  • 2 Tablespoons Fresh Dill, Chopped
  • 1 Tablespoon Lemon Juice
  • ¼ teaspoons Black Pepper, Freshly Ground
  • 16-⅓ ounces, weight Tube Of Refrigerated Buttermilk Biscuits
  • ¼ cups Cilantro, Roughly Chopped

Preparation

Preheat the oven to 375 degrees.

Soften the cream cheese in the microwave. Add sour cream, red onion, roasted pepper, dill, lemon juice and freshly ground black pepper and mix well.

Open the refrigerated buttermilk biscuits, cut into fourths (if you have the big biscuits) and shape into 1-inch balls. Push the biscuit balls into a greased mini muffin pan and make an indentation in the center of each biscuit with your thumb. Place a heaping teaspoon of the sour cream mixture on each biscuit and bake for 14 to 17 minutes. Roughly chop fresh cilantro for garnish.

When the appetizers are nicely browned and the cheese mixture is bubbly, remove them from the oven, and top with the chopped cilantro.

Have made these a couple times and really like them. I make sure to use flaky biscuits, as any other kinds tends to be too dense.

I made these for a baby shower – they were good, but the biscuits ended up being a little too dry for my liking. Next time I think I’ll try them w/ crescent rolls instead. Otherwise very good, easy and I usually have all the ingredients on hand so they are also convenient to whip up anytime. Thanks for sharing!
