Description

Asparagus, red pepper, turkey and romaine cradled in a spinach wrap with a savory honey lemon mayo.

Ingredients

  • 1 package Spinach Tortilla Wraps
  • 16 slices Thinly Cut Turkey
  • 4 leaves Romaine Lettuce
  • 24 spears Asparagus
  • 1 whole Red Pepper, Sliced Into Strips
  • 1 Tablespoon Olive Oil
  • 1 dash Coarse Salt
  • 1 dash Coarse Pepper
  • 1 Tablespoon Honey
  • 2 teaspoons Lemon Juice
  • ⅓ cups Light Mayonnaise
  • ⅛ teaspoons Ground Cayenne Pepper
  • ⅛ teaspoons Salt

Preparation

Preheat broiler. Snap off the tough ends of the asparagus. Cut the bell pepper lengthwise into strips. Discard membrane and seeds. Line asparagus spears and pepper strips on a cookie sheet. Brush with some olive oil and coarse salt and pepper. Broil for about 10 minutes until veggies are tender and slightly blackened.

Mix honey, lemon juice, mayo, salt and cayenne together. Lay out a spinach tortilla and brush with the honey mayo mixture. Add a romaine leaf and 4 pieces of turkey. Top with a few asparagus spears and red pepper strips. Finish with a little more of the honey mayo. Roll into a wrap and cut into two pieces. Yum!

Everyone that has tasted these loves them. They are so easy to throw together and quite portable for lunch on the run or picnics. The sauce really makes them so yummy. You can sub out the veggies for different ones and try changing it up. You really can’t mess up a good turkey wrap with a great sauce.
