Description

Need a healthy yet indulgently flavored appetizer? Look no further—these little gems are delicious, easy, and best of all, nutritious!

Ingredients

  • 1 teaspoon Salt, Divided
  • 2 cups Water
  • 1 cup Red Lentils
  • ½ cups Bulgur
  • ½ cups Extra Virgin Olive Oil
  • 1-½ cup Onion, Diced
  • 1 Tablespoon Garlic, Minced
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Cumin
  • 3 Tablespoons Tomato Paste
  • ½ cups Parsley, Minced
  • ¼ cups Green Onions, Finely Sliced
  • ¼ teaspoons Black Pepper

Preparation

Add 1/2 teaspoon salt to the water and bring to a boil. Add lentils, lower heat to a simmer and cook until soft. Once the lentils are cooked, remove from the heat and stir in the bulgur. Cover and set aside for at least 15–20 minutes.

In a skillet, heat olive oil over medium high heat. Add onion, garlic, coriander, and cumin. Cook on medium-low heat until onions are soft. Add tomato paste to the onion mixture and mix well.

Stir onion mixture into the lentil mixture. Add parsley, green onions, and pepper. Taste before adding the remaining 1/2 teaspoon of salt.

Allow mixture to chill before shaping into balls. Serve chilled.
