Description

A nice way to get your greens in. It can either be a tasty appetizer or a simple side to a really good soup.

Ingredients

  • 1 whole Shallot, Diced
  • 1 clove Garlic, Minced
  • 2 whole Anochovies (or 1/2 Teaspoon Anchovy Paste)
  • 3 Tablespoons Olive Oil, Divided (1 For The Pan, 2 For Brushing The Bread)
  • 2 bunches Red Chard, Cleaned And Chopped
  • 1 teaspoon Red Wine Vinegar
  • Pepper
  • 1 whole Baguette Cut Into 1 Inch Slices
  • ½ cups Crumbled Feta Cheese

Preparation

Add shallots, garlic, and anchovies to a large pan with 1 tablespoon olive oil. Saute over medium heat for one minute. Add chard and continue to saute, stirring occasionally. Once the chard is wilted down and soft, remove from heat and add in the splash of vinegar. Add pepper and test for salt (anchovies can be salty). Add salt if needed.

Brush slices of bread with remaining olive oil and toast under the broiler for 30 seconds on each side. Add a nice pile of greens on top and sprinkle with feta cheese. Pop back under the broiler for another 30 seconds to brown the cheese slightly.
