Description

Pomegranate syrup infuses a delicious blend of nuts, dried cherries, and oats for a delicious granola.

Ingredients

  • FOR THE POMEGRANATE SYRUP:
  • 2 cups Pomegranate Juice
  • 2 teaspoons Lemon Juice
  • ¼ cups Granulated Sugar
  • ¼ cups Brown Sugar
  • _____
  • FOR THE GRANOLA:
  • ½ cups Pomegranate Syrup (recipe Above)
  • ½ cups Unsalted Walnuts
  • ½ cups Unsalted Pecans
  • ½ cups Almonds
  • ½ cups Unsalted Sunflower Kernels
  • ¼ cups Pine Nuts (optional)
  • 2-½ cups Uncooked Old Fashioned Oats
  • 1 teaspoon Salt

Preparation

Preheat oven to 300F.

Add pomegranate juice, lemon juice, and white granulated sugar to small saucepan. Bring to a boil over high heat and stir until sugar is dissolved. Decrease temperature, then simmer over medium to medium low heat until reduced by a little over half. This should take about 45 minutes all together. EYE IT. Allow to cool, juice will have a syrupy texture. Once cooled, stir in the brown sugar until dissolved.

Now, add nuts, oats, and salt to a large bowl.

Pour 1/2 cup of the syrup mixture over nuts and oats then stir in well.

Spray a baking sheet with cooking spray, and spread mixture evenly on sheet. Bake 35 to 40 minutes stirring every 10 minutes. Doesn’t it smell divine?

Allow to cool 30 minutes on cooling rack, then have your way with it!
