Description

A sweet and tangy appetizer made with slightly spiced blueberries, pomegranate seeds and creamy goat cheese, finished off with a drizzle of honey.

Ingredients

  • FOR THE TOPPING:
  • ½ cups Pomegranate Juice
  • 2 cups Frozen Blueberries
  • ½ whole Lemon, Juiced
  • ¼ cups Sugar
  • 1 Tablespoon Honey
  • 1 pinch Cinnamon
  • ½ whole Pomegranate (seeds Only)
  • FOR SERVING:
  • 1 whole Baguette, Sliced Into 1/4-1/2 Inch Slices, Toasted
  • 1 log Goat Cheese (8 Ounce Log), Softened
  • Honey For Drizzling

Preparation

Place pomegranate juice, blueberries, lemon juice, sugar, honey and cinnamon in a small saucepan. Bring to boil. Reduce heat to low and simmer until fruit is softened and mixture is thick and syrupy, about 10 minutes.

Remove pan from heat and allow fruit to cool slightly. Stir in pomegranate seeds. Mixture can be served warm or at room temperature.

To serve:
Spread toasted baguette slices with softened goat cheese. Top with a teaspoon of fruit mixture and drizzle with honey. Serve warm or room temperature.
