These easy Polenta Nachos are not as messy as the traditional kind, making them perfect for a crowd! Perfect with leftover chili or whip up a new batch for these.
Preheat broiler.
Heat olive oil in a stove top pan over medium heat. Place sliced polenta in the pan and cook on each side for approximately 2-3 minutes.
Place polenta on a baking sheet, then place a spoonful of chili (cold or warm) on each polenta cake and sprinkle with cheddar cheese. Heat under the broiler for 2-3 minutes until cheese is melted and chili heated through (if cold).
Garnish with jalepeno slice and serve.
