Description

Today I made a quick and delicious breakfast that gave me an energy boost for the rest of the day.

Ingredients

  • FOR THE GUACAMOLE:
  • 1  Avocado, Mashed
  • 1 clove Garlic, Minced
  • 50 milliliters Lemon Juice, Freshly Squeezed
  • ½  Green Onion, Chopped
  • 1 Tablespoon Chopped Parsley
  • 1 pinch Salt
  • FOR THE SANDWICH:
  • 2 liters Water
  • 80 milliliters Vinegar
  • 1  Egg
  • 1  Sandwich Bun, Cut In Half
  • 2 slices Prosciutto Crudo
  • 1 slice Tomato

Preparation

Combine avocado, garlic, lemon juice, salt, the parsley, chopped green onion and blend well, until it’s smooth and delicious.

For the sandwich, poach the egg: In a saucepan, add water and vinegar and bring to a boil. In the meantime, poke a tiny hole in the egg’s base. When the water is about to boil, gently place the egg and let it cook for 10 seconds. After that, take it out, break the shell and let it simmer for 4 minutes. Transfer the egg to a bowl with cold water.

To assemble the sandwich, place a layer of prosciutto on the bun, top with tomato, guacamole, and the poached egg. Bon appetit!
