I tried this in a local restaurant years ago and went home and made my own version. My mom thinks mine is better than the restaurant version. Great as an appetizer, but I eat it as a meal.
Sauté onion in bacon drippings till golden brown. Blend in flour. Add half-and-half. Stir with fork till thickened. Add spinach and seasonings and blend.
Preheat oven to 350F. Place tortilla shells on a baking sheet and place in the oven for about 1 to 2 minutes. Remove and spread with spinach mixture. Top with tomatoes, sliced jalapenos and cheese. Bake for 15 to 20 minutes. Top with sour cream and salsa if desired.
