Description

A sweet, solid and slightly spicy salsa. Perfect for summer!

Ingredients

  • 1 can (16 0z. Can) Black Beans, Drained And Rinsed
  • 3 Tablespoons Lime Juice
  • ½ cups Red Onion, Chopped
  • ⅓ cups Cilantro, Minced
  • 1 can (20 Oz. Can) Pineapple Chunks
  • 1 whole Jalapeno
  • ½ teaspoons Sea Salt
  • ½ teaspoons Pepper

Preparation

In a medium bowl, add rinsed and drained black beans. Pour lime juice over the beans and coat evenly.

Add in chopped red onion. Add cilantro to the bowl as well.

Take the pineapple and chop into smaller pieces (chunk size is too large for salsa); add to the bowl.

Slice open the jalapeno, removing the seeds and white pith on the inside. Mince into small pieces and add to the bowl of salsa.

Dash with salt and pepper. Mix the entire contents of the bowl throughly, cover and refrigerate until cold. Serve with tortilla chips, on top of grilled chicken.

We’ve been getting wonderful fresh pineapple currently and I love black beans so will be trying this, although maybe as a salad :)! Thank you for the recipe!
