Here is a quick little recipe that yields a satisfying 2-bite appetizer. Just don’t do what I did: forget to thaw the phyllo pastry! I ended up making this the day after I had planned to!
Mix the cheese, eggs, and flour well with an electric mixer.
Separate the phyllo dough into 5 sets of 4 sheets. (Work with one set at a time because they dry out.) Cut each set of 4 sheets into 12 3”x3” squares. Set each of the 12 squares into a greased 12-muffin MINI muffin pan.
Scoop 1 tablespoon of the pimento mixture into each phyllo shell. Bake at 350ºF for 12-14 minutes.
Yields 60 appetizers or 30 servings of 2 each.
