How about some homemade pimento cheese waiting for you in your lunch box? Yes please! I love pimento cheese and this recipe is so easy. You will never buy store bought pimento cheese again. Put some in a small container and combine it with some of your favorite vegetables and maybe a pretzel stick or two and you have a great lunch.
Place the cheddar cheese, cream cheese, mayonnaise, garlic powder, cayenne pepper, minced jalapeno and pimentos into a mixing bowl. Use a mixer and beat at medium speed until it is thoroughly combined. Season to taste with the salt and pepper. Store in an airtight container in the fridge for several days.
Makes approximately 4 (1/2 cup) servings.

Her enviable TK recipe box is a testament to that. Go see for yourself!
