Description

How can you possibly go wrong with peppered bacon coated with dark brown sugar, baked, then glazed with pure maple syrup mixed with a little cayenne?

Yeah, it’s naughty good.

Ingredients

  • 1 pound Thick Cut, Peppered Bacon
  • ½ cups Dark Brown Sugar (more As Needed)
  • ¼ cups Pure Maple Syrup
  • ¼ teaspoons Ground Cayenne Pepper

Preparation

Preheat your oven to 375F.

Mix the syrup and cayenne pepper well in a small bowl and set aside.

Coat both sides of each bacon slice generously with brown sugar.

Arrange the bacon on a wire rack inside a sheet pan.

Bake in the center rack in your oven until the sugar is starting to caramelize and the bacon just starts to crisp around the edges. This should take about 15 minutes, depending on the thickness of your bacon.

Remove from the oven and brush each slice with the syrup mixture and bake another five minutes.

Flip the bacon over and brush the other side with the syrup. Put it back in the oven and bake until the bacon reaches your desired doneness.

Remove from the oven and let sit five minutes.

Enjoy, but try not to eat it all at once.

I love this and do a variation to increase it from just bacon, to something amazing. Wrap the brown sugar/syrup bacon around a pork loin, smothered with the same ingredients, and a few kisses of bourbon spray. I then smoke it over mesquite and hickory chips.

I have been searching for this recipe! This is the bacon they serve at The Brewery Gulch in (Mendocino, CA), voted the best bed and breakfast in Northern California. They didn’t call it pig bacon so I had a hard time searching for this recipe. With the exception of adding red pepper flakes to the maple syrup as they did, this bacon tasted identical and it’s the best bacon I’ve ever had! My boyfriend usually refuses to eat pork products and he loved it too!

Ridiculously addictive. I made a full batch to go into my bacon toffee, I could have eaten it all before it got into the candy if I didn’t stop myself.

My husband doesn’t want bacon any other way, now that we’ve found this recipe. My bacon never got crispy in the oven so near the end of baking (25 minutes), I transferred them to a skillet and cooked them on the stove for about 7-8 minutes more. Will be making again and again and again!
