Description

Quick and easy cold appetizer that can be made in advance!

Ingredients

  • 1 container Soft Cream Cheese (not The Brick Kind)
  • 2 jars Mini Kosher Dill Pickles
  • 2 packages Cooked Corned Beef

Preparation

Leave the cream cheese out for a while to soften, then dry off the pickles with paper towels. Spread the cream cheese on to a slice of corned beef, then carefully roll up a pickle. Repeat until all pickles are rolled.

Slice each pickle package into 3/4-inch pieces, seam side down. Arrange on a platter, stacking if necessary.

Whenever I make these, there are never any left at the end of the party!

Note: When purchasing the pickles, try to choose jars that have relatively straight ones. Sometimes the minis are too bent to roll properly.

Ooo good idea! I worked in a bakery in college and I used to slice up baguettes for catering orders with an electric knife…never thought of using one on these, I will have to invest!

Yum! I also make these with deli ham and the tiny sweet pickles. A couple of hints: dry the meat slices and pickles really well to make the spreading and slicing easier. I slice them with my electric knife and it keeps the meat from shredding or otherwise being mean.
