Fresh pesto and goat cheese combine to make a super simple but delicious appetizer.
To make the pesto: combine basil, olive oil, 1/2 cup pine nuts, 1/2 cup Parmesan and the garlic in a food processor or blender. Plus and mix until smooth.
For cheese ball: In a medium-sized bowl combine 1/2 cup of the pesto with the goat cheese and milk. Mash with a fork until well combined.
Form mixture into the shape of a ball, cover with plastic wrap and put in the fridge for at least 1 hour.
Put remaining Parmesan cheese and pine nuts in a shallow bowl and roll cheese ball in the mixture to cover it. Put it on a serving platter. Serve and enjoy!
Simple and easy!
