Melt butter in a large skillet and cook onion until caramelized, stirring frequently. It will be brown and limp and will have cooked down significantly. Season with salt and pepper.
Toss sliced pears with flour to coat.
Roll out pie crust to a 14 to 16-inch circle. Transfer to a large baking sheet or pizza pan.
Spread 1/2 of cooked onion over pie crust, leaving a 4-inch border all the way around.
Layer pears, remaining onion and blue cheese. Top with toasted walnuts, if desired.
Fold the pie crust border up toward the center, pleating as you go. There will be a small hole in the middle, exposing the pear mixture. Press the dough lightly and brush with beaten egg.
Bake at 425 degrees (F) for 20 -25 minutes till golden brown.
Let cool slightly and cut into wedges to serve.
