Description

Big batch (20 cups) snack mix. Only 15 minutes prep and 30 minutes to set up. Perfect year-round snack-or divide, package, and gift.

Ingredients

  • 15 cups Popped Popcorn
  • 2-½ cups Crisp Rice Cereal, Such As Rice Krispies
  • 1 can (9 1/2 Oz. Size) Salted Peanuts
  • 1 pound White Almond Bark (candy Coating)
  • ¼ cups Peanut Butter
  • 1 cup (or More, If Desired) Candy-coated Peanut Butter Candies, Such As Reese's Pieces

Preparation

In a very large bowl mix popcorn, cereal, and peanuts. Set aside.

Break up the almond bark and put it in a medium-size, microwavable bowl. Add peanut butter to the bowl and microwave on medium power, stirring occasionally, until all the almond bark is melted, 2–3 minutes. Mix the almond bark and peanut butter together well.

Pour half of the almond bark/peanut butter mixture over the popcorn mixture and stir well. Pour the remaining almond bark/peanut butter mixture over the popcorn mixture and stir until everything is well-coated. Stir in the candies.

Put 2 long sheets of waxed paper or parchment on the counter and pour out the popcorn mixture, spreading it out well. Let set up at least 30 minutes. Break into pieces and serve. Store in a covered container at room temperature.
