This is so easy to make and so tasty on fish, chicken, pork or beef. Would also be lovely just to sit on the counter and eat it up with a big spoon!
Cut up all your fruit and veggies. Measure out all your ingredients. Pop everything but the cilantro into a bowl and mix it all up. Pop it in the fridge for about 30 to 60 minutes to let the flavours meld together.
Remove from fridge and garnish with cilantro.
Serve over top of fish, chicken, pork or beef. You can also use it as a dip for chips if desired.

I am a Mexican food fiend and nothing makes me happier than a big bowl of pico de gallo and chips. This is such an easy recipe and you can make it mild, medium or spicy depending on what you prefer. I like spicy, so jalapeno peppers are for me, but you could add habanero peppers if you like a lot of heat!
