Description

This recipe has passed through several generations of family, and it is still going strong. It is an addictingly easy and tremendously crowd pleasing appetizer for your next party. They WILL be gone!

Ingredients

  • 1-½ cup Finely Grated Parmesan Cheese
  • ¾ cups Mayonnaise
  • ⅔ cups Finely Chopped Onion
  • 12 slices Bread
  • 1 stick Butter

Preparation

This, of course, tastes best with freshly grated Parmesan or Parmesan Reggiano cheese. But in a pinch I’ve used the Kraft grated stuff in the green can and these things still disappear as fast as ever.

Combine the cheese, mayonnaise and onion and mix to combine. (I chop and mix mine in the food processor.)

Cut off the crusts of each slice of bread. Quarter the slices of bread (or if you want to be fancy about it, you can use a 1 1/2-2 inch round cookie cutter to cut 4 small circles out of each slice of bread). You can use party rye bread or baguettes if you prefer. All are equally delicious.

Preheat your broiler.

Put a thin layer of butter on each slice of bread. Top with a nicely rounded plop of the onion and cheese mixture. Place them on a baking tray. These can be refrigerated at this time OR frozen for quick appetizers at a later date.

Place the tray in the oven and broil for about 5 minutes, watching closely so they don’t burn. They will puff up and become nicely browned. And then…they will disappear as fast as they come out of the oven.
