Description

Cheese and crackers with a twist. Drizzle some homemade lemon garlic aioli over these crispy feta cheese bites and enjoy! The perfect spring pairing for lighter craft beers. Or a glass of wine, if this is your preferred beverage.

Ingredients

  • FOR THE FETA CHEESE BITES:
  • ¾ pounds Feta Cheese In Brine (preferably Bulgarian Sheep's Milk)
  • 2  Eggs
  • ½ cups Flour
  • 1 cup Panko Bread Crumbs
  • 1 Tablespoon Paprika
  • ¼ cups Olive Oil
  • Garlic Chives, For Garnish (optional)
  • FOR THE LEMON GARLIC AIOLI:
  • 2  Egg Yolks
  • 2 cloves Garlic, Pressed
  • 1 pinch Salt
  • 2 teaspoons Fresh Lemon Juice
  • ¼ cups Extra Virgin Olive Oil

Preparation

For the feta cheese bites:
Get a parchment paper or silpat-lined sheet pan ready. Turn oven on to 350°F.

Pat feta cheese chunks dry and cut into bite size pieces. Make an egg wash by vigorously beating eggs. Set aside.

Mix flour, panko bread crumbs and paprika. Add extra paprika if you really like it.

In a frying pan, heat olive oil (or substitute with vegetable oil). Dip each piece of feta cheese in egg wash then cover with the panko mixture. Lightly fry each piece on both sides (no more than 5 feta pieces at a time). Set lightly fried pieces onto the lined sheet pan.

Place in the preheated oven for 10 minutes.

For the lemon garlic aioli:
Use a hand mixer to beat egg yolks. Add pressed garlic, salt and lemon juice; beat well. Slowly pour the extra virgin olive oil while continuing to beat the aioli. Once olive oil is incorporated, set aside.

Arrange the feta bites for serving and gently spoon aioli over each one. Garnish with the garlic chives (if using).
