Description

Slow roasting roma tomatoes brings out their sweetness and intensifies their flavor. Great as a pizza topping or added to a sandwich.

Ingredients

  • 10 whole Roma Tomatoes, Halved
  • 2 teaspoons Kosher Salt, Or To Taste
  • 2 teaspoons Freshly Ground Black Pepper, Or To Taste
  • 2 Tablespoons Extra Virgin Olive Oil Or To Taste

Preparation

Preheat oven to 250 degrees.

Spray a shallow glass baking dish with cooking spray.

Arrange halved tomatoes cut side up in a single layer in the dish. Sprinkle with the desired amount of salt and pepper. Let the tomatoes rest for 20 minutes.

Place baking dish in the preheated oven and bake for about 4 hours. You are looking for the tomatoes to lose most of their liquid, but still be soft and pliable. I sometimes turn the tomatoes if they still retain a lot of their liquid after about 3 hours.

Remove from the oven and layer in a small glass bowl, drizzling some olive oil over each layer as you go; don’t drown them! Use immediately or cover and refrigerate and use as needed.

These are wonderful as a topping on pizza.

For sandwiches and salads I let them come to room temperature. My favorite sandwich is hummus, cucumber, thinly sliced red onions and these tomatoes. Yummy!

They can be tossed with pasta also.

The possibilities are endless, really :)
