Description

Made with just a handful of ingredients, this cheese log is so easy to make and so yummy, I always double the recipe so we can leave one with the host of a party and have extra left over at home!

Ingredients

  • 2 packages 8oz Cream Cheese, Any Style Other Than Fat Free
  • 6 ounces, weight Swiss Cheese, Finely Shredded
  • ¾ cups Dried Apricots, Finely Chopped
  • ¾ cups Dried Cranberries, Finely Chopped
  • 4 Tablespoons Green Onion, Finely Chopped
  • 1 cup Toasted Almonds- Slivered

Preparation

In a medium bowl, combine cream cheese and finely shredded Swiss cheese; mix until creamy. Add apricots, cranberries and green onions; mix until just incorporated.

*** If you do this with an electric mixer or standing mixer, it is easier, but the dried fruit will slightly tinge the color of the cream cheese so beware of mixing too long after adding fruit.

Place toasted almonds on sheets of waxed or parchment paper and separate mixture into 2 to 4 equal servings depending on how large your serving platter is and shape into logs or into ball form. Begin to form with a spatula, then into a rolling motion with the paper, covering any exposed cheese with toasted almonds. Roll in almonds until complete coated.

Place in the fridge after forming and chill thoroughly before serving, 4-24 hours. I make mine the day before I need it for the best flavor.

Serve with a simple cracker such a Wheat Thins. So yummy! Enjoy!
