Description

This is a great way to get kids to eat vegetables. It’s fantastic hot or cold.

Ingredients

  • 2 whole Zucchinis, Grated Or Insides Scooped Out
  • 1 whole Large Carrot, Grated
  • 2 whole Potatoes, Grated
  • 1 whole Large Egg Or 2 Small Ones
  • 1 slice Feta Cheese, Crumbled Or Grated (if Hard Enough)
  • 1 cup All-purpose Flour
  • Oil, For Frying

Preparation

If you made the stuffed zucchini recipe I submitted, this is a great way to use up the scooped out insides.

Take your grated vegetables and place in a bowl. Crack the egg(s) and mix with a wooden spoon. Add the feta cheese. Mix. Then, add the flour, but rather than just dumping the flour in, put in half and add as you mix. The consistency should resemble that of thick pancake batter, so 1 cup of flour may be too much or not enough. It depends on your vegetables, eggs, etc. You can play it by ear with this one.

Let it rest for a few minutes as your oil warms up. Ladle or spoon out silver dollar-sized portions, adding batter to the oil and pushing slightly on the fritter. Turn once as soon as the bottom side becomes golden. Try to keep the heat on medium so that the inside will cook as well as the outside.
Place on a kitchen towel to drain excess oil.

Again, serve alone or with plain yoghurt!
