Description

Bite size hunks of yummy! Simple pie crust filled with mozzarella and feta cheeses, caramelized onion, garlic and fresh basil, baked and fabulous!

Ingredients

  • 2 whole Ready-to-Use Pie Crusts
  • 1 whole Sweet Onion, Sliced
  • 1 Tablespoon Extra Virgin Olive Oil
  • 3 cloves Garlic, Minced
  • 2 packages (8 Oz. Package) Large Mozzarella Cheese Balls (fresh)
  • 6 ounces, weight Feta Cheese
  • 1 bunch Fresh Basil
  • 2 whole Roma Tomatoes, Sliced

Preparation

Preheat the oven to 450ºF.

Slice the onion and sauté in the extra virgin olive oil. While the onion is cooking, cut the pie crust to fit in an ungreased muffin tin. You can use a large or small muffin tin, it depends on how big you want your bites. Using a fork, pierce holes in the bottom of the pie crust cups once they are in the muffin tin. Bake for 8 to 10 minutes until the edges are light brown.

When the onion is nice and caramelized, add the minced garlic and cook another minute or so.

Slice the mozzarella cheese in ¼-inch slices and put into the bottom of the pie crust cup. Next add a spoonful of the onion, then some feta cheese, topped with a bit of the basil, a ¼-inch slice of tomato, and top with a bit more of the feta. Bake another 8 to 10 minutes or until the cheese is nice and brown.
