Description

Similar to satay, this particular marinade is common throughout northern Thailand. Cracked pepper and garlic are the dominant flavors of this snack best eaten with sticky rice.

Ingredients

  • 1 pound, 1-⅔ ounces, weight Pork (meat With Little Fat Is The Best Choice For This Dish)
  • 5 cloves Garlic
  • 2 sprigs Cilantro
  • 1 teaspoon Coriander (ground)
  • 5 Tablespoons Oyster Sauce
  • 2 Tablespoons Fish Sauce
  • 2 Tablespoons Sugar
  • 2 teaspoons Ground Pepper

Preparation

Prepare the marinade: crush the garlic with the cilantro and coriander in a mortar pestle. Mix the oyster and fish sauces together in a small bowl, then add the garlic mixture. Mix in the sugar and pepper.

Prepare the pork: slice the pork (from loin is best) into thin pieces about 2 inches square. Place pork into the marinade and let it sit for 1+ hours in the fridge.

Remove the pork from the marinade. Skewer the pork onto bamboo (soaked in water) or metal skewers and grill over medium heat until meat is nicely browned and juices run clear. You can also broil the pork in the oven – until meat is nicely browned and juices run clear.
