Fabulous way to use up all of the season’s extra zucchini – and I bet most people wouldn’t know that they didn’t have any crab in them at all.
Combine all ingredients (except Panko bead crumbs) in a bowl. The texture can be adjusted – if it’s too dry, add another egg or a little bit more mayonnaise; if too wet, add more bread crumbs. Form mixture into patties and coat the patties in Panko bread crumbs. Heat some oil (and a little butter) in a non-stick skillet, just enough to coat the bottom of the pan, not enough to deep-fry. Fry over medium heat until golden brown on both sides, about 2 to 3 minutes per side. Makes 8 big or 10 medium cakes. Serve with a wedge of lemon and a little tartar sauce. Mmmm good.
