Description

Mint and Pomegranate Raita is a delicious combination of mint, coriander, and pomegranate pearls. The freshness of mint and coriander definitely make this raita a summer favorite packed with the goodness of pomegranate.

Ingredients

  • ¼ cups Mint Leaves
  • ¼ cups Coriander Leaves
  • 4 cloves Garlic
  • 2  Green Chilies
  • 2 cups Thick Yogurt
  • ¼ cups Water Or As Needed
  • Salt To Taste
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Chaat Masala
  • 1 Tablespoon Sugar
  • 1 cup Pomegranate Arils

Preparation

Blend together mint, coriander, garlic and green chillies in a mixer using a tablespoon or so of water, until mixture is a chutney-like paste. Transfer the paste to a bowl and set aside.

In another bowl, whisk yogurt using a wire whisk. Add 1/4 cup or so of water to get the desired consistency. Whisk well to ensure that no thick lumps remain. Add the salt, cumin powder, chaat masala and sugar to the yogurt, and whisk it all together until well combined.

Add the mint paste to the yogurt. Stir gently to combine. Taste and adjust the seasoning accordingly.

When ready to serve the raita, add pomegranate arils and stir to combine evenly. Serve chilled or at room temperature.
