Description

Came up with these quesadillas when I was trying to use up leftover pineapple and thinking of what to make for lunch! You can leave the jalapenos off for children.

Ingredients

  • 4 whole (10 Inch) Flour Tortillas
  • ½ cups Chopped Pineapple
  • ½ pounds Sliced Ham
  • ⅓ cups Diced Pickled Jalapenos
  • ¼ cups Crumbled Bacon
  • ½ cups Shredded Mozzarella Cheese
  • ½ cups Shredded Cheddar Cheese

Preparation

1. Heat cormal or griddle to medium heat.
2. Lay tortillas flat on the counter. On half of the quesadilla, divide pineapple, ham, jalapenos, bacon and cheeses between each one evenly. Fold them in half.
3. Place folded tortillas on cormal/griddle until golden brown, about 3-5 minutes each side. Flip and let the other side get golden brown also.
4. Remove and serve with sour cream if desired.
