Description

This is a quick and tasty appetizer. It is great for parties or a snack! Serve with crackers or toasted bread.

Ingredients

  • 1 package (about 8 Oz.) Brie
  • ½ cups Red Onion, Diced
  • 4 strips Roasted Peppers In Extra Virgin Olive Oil, Diced
  • 4 strips Sun-dried Tomatoes Packed In Extra Virgin Olive Oil, Diced
  • 3 cloves Garlic, Minced
  • 1 dash Salt, Or To Taste
  • 1 dash Pepper Or To Taste
  • 1 Tablespoon Thyme
  • 3 Tablespoons Extra Virgin Olive Oil, Divided

Preparation

1. Preheat oven to 350 degrees.

In a bowl, add the diced red onion, roasted peppers, sundried tomatoes, and minced garlic. Add the salt and pepper, and thyme. Add 1 1/2 tablespoons of the extra virgin olive oil. Mix ingredients together.

2. Put the brie on a nonstick pan. (Depending on the type of brie, you might have to put a few slits on top so the melted cheese can seep out while it is cooking.) Once you have placed the brie on the pan, top the brie with the sundried tomato mixture in the bowl. Drizzle the brie with remaining oil.

3. Cook for 15 minutes or until cheese has melted.

4. Serve with crackers or toasted bread. Enjoy!
