Description

Fresh, fast, delicious and healthy, Mediterranean Hummus Pizza is a light but flavorful way to ring in spring.

Ingredients

  • 1-½ cup Prepared Hummus, Store-bought Or Homemade
  • ¼ cups Roasted Red Peppers, Sliced Into Thin Strips (or Up To 1/3 Cup, To Taste)
  • ½ whole English Cucumber, Thinly Sliced (or Up To 3/4 Cucumber, To Taste)
  • ½ whole Red Onion, Sliced As Thinly As Possible
  • ½ cups Black Olives, Thinly Sliced Or Halved
  • ½ cups Feta Cheese Crumbles
  • ¼ cups Fresh Parsley, Minced
  • 1 whole Pre-baked 12-16 Inch Pizza Crust, Store-bought Or Homemade (See Linked Post For Pre-baked Pizza Crust Recipe)

Preparation

Spread the hummus over the crust to within 1/2-inch of the edges. Evenly space the roasted red pepper strips over the hummus. Arrange the cucumber slices over the top, then the red onions and black olives. Scatter the feta cheese crumbles evenly over the top and sprinkle the minced parsley over everything. Slice into wedges or squares and serve at room temperature.

I made this a couple of weeks ago when I had compnay over. Let me tell you it was a really BIG HIT! Everyone loved the flavors and not one piece was left over it was gone withing 20 minutes. Thanks so much for posting the recipe it was really really good!
