Description

A healthy granola bar filled with yogurt-covered almonds, yogurt-covered raisins, peanuts, and puffed wheat cereal. A lovely maple almond butter ties everything together.

Ingredients

  • 1 cup Rolled Oats
  • ¼ cups Whole Wheat Pastry Flour
  • 1 cup Puffed Rice Cereal (I Like Trader Joe's Puffed Wheat)
  • ½ cups Honey Roasted Almond Slivers
  • ¼ cups Peanuts
  • ¼ cups Brown Sugar
  • ⅔ cups Maple Almond Butter (or Other Nut Butter Of Your Liking)
  • 2 teaspoons Vanilla
  • ⅓ cups Honey (agave Nectar Would Work Too)
  • ½ cups Yogurt Covered Almonds, Chopped
  • ½ cups Yogurt Covered Raisins

Preparation

Preheat oven to 350ºF.

In a mixer bowl with a paddle attachment, combine oats, flour, puffed cereal, almond slivers, peanuts, and brown sugar and stir to combine. Add in almond butter, and mix with a spoon to break it up and create a dough. Add in vanilla extract, then mix again. Add in honey and stir to moisten completely. Add more almond butter if needed if dough looks dry.

Fold in yogurt almonds and yogurt raisins.

Spray a 9×13 inch baking dish with nonstick spray and press the dough into the pan. Bake for 20-25 minutes or until the top is golden brown.

Remove and let cool completely before cutting; there may be minimal crumbling but they should hold together completely. If they are crumbling, put them in the fridge for a few minutes, then try re-cutting.

Keep in the fridge or room temperature for up to 7 days.
