Description

Roasted almonds and cashew smell amazing while cooking and taste even better when they are ready.

Ingredients

  • 1 pound Raw Cashews
  • 1 pound Raw Almonds
  • 2 Tablespoons Butter
  • 2 Tablespoons Maple Syrup
  • 2 Tablespoons Honey
  • 1 teaspoon Vanilla
  • ¼ teaspoons Ground Nutmeg
  • ¼ teaspoons Ground Cinnamon
  • Kosher Salt

Preparation

1. Preheat the oven to 350ºF.
2. Place the almonds and cashews in a large mixing bowl.
3. Melt the butter, syrup and honey in the microwave for 30-45 seconds in a separate microwave-safe container.
4. Stir the vanilla, nutmeg and cinnamon into the butter mixture.
5. Toss the maple honey syrup with the nuts and spread them onto a sheet pan lined with heavy duty aluminium foil.
6. Roast in the oven for 6-8 minutes and then stir them around on the sheet.
7. Roast for another 6-8 minutes until they’ve developed a nice color and great smell.
8. Sprinkle kosher salt over the nuts immediately after they come out of the oven. They’ll be gooey while they are still warm and be much less sticky once cooled.

Didn’t have cashews but used pecans and almonds—delicious and the house smells great

Simple and delicious. I made a batch last night to give as Christmas gifts….but my kids ate them all. Made another batch this morning with cashews and macadamia nuts. I imagine these would be terrific with any kind of nuts.
