Description

I used to think a fruit salsa was a weird concept, but now I’m totally sold on the idea. It is such a refreshing side dish and goes perfectly with grilled chicken or fish. My daughter loves eating it by the spoonful.

Ingredients

  • 1 whole Ripe Mango
  • 2 whole Medium Sized Peaches
  • ¼ cups Diced Red Onion
  • 1 Tablespoon Minced Cilantro
  • ½ whole Lime
  • 1 dash Salt

Preparation

1. Slice mango around the pit. Be sure to avoid getting too close to the pit because the flesh around the pit is stringy. Peel the skin, dice into 1/2 inch pieces and add to a medium bowl.
2. Slice the peaches around the pit, peel, dice and add to the bowl.
3. Add the red onion and cilantro. Squeeze in the lime juice. Add a dash of salt and mix gently.

Serve immediately or refrigerate no more than a couple of hours.

Yum! This was delish! My peaches weren’t ripe yet so I used 1 mango and 1/3 of a red bell pepper and it was delicious! I put it on top of chimichurri steak and it was a wonderful summer meal. Thank you!
