Description

Meatballs over rice with pineapple? Yes, please.

Ingredients

  • ¼ cups Bread Crumbs
  • Salt And Pepper, to taste
  • ¼ teaspoons Ginger
  • 1 pound Ground Beef
  • 1 whole Egg
  • 12 ounces, fluid Pineapple Chunks, With Juice
  • ¼ cups Apple Cider Vinegar
  • 3 Tablespoons Soy Sauce
  • ¼ Tablespoons Red Pepper Flakes
  • ¼ cups Brown Sugar
  • 1 Tablespoon Cornstarch
  • 2 Tablespoons Cold Water

Preparation

Meatballs:
Mix together bread crumbs, salt, pepper, ginger, and beef together in a large bowl. Add in egg last and mix together fully. Roll meat mix into 1-inch balls and cook in a large skillet on medium-high heat until meatballs are cooked though and no longer pink. Set aside or even freeze if keeping for a later date.

Sauce:
Drain pineapple juice into a cup, set pineapple chunks aside for later. Add in the water to make about 1 cup of juice. Mix in vinegar and soy sauce. Pour ingredients into a small pot and heat over medium heat. Add in red pepper flakes. Add in brown sugar and stir until sugar is dissolved. Mix in cornstarch dissolved in the cold water and set aside.

Add in meatballs and pineapple chunks and cook until meat is warm again. Serve.

We really enjoyed this recipe. It was very easy and came together quickly. Should ¼ Tablespoons Red Pepper Flakes really be 1/4 Teaspoon? I used 1/4 teaspoon and it was very spicy. I cooked the meatballs until they were almost done and then made the sauce in the same pan. I added the meatballs to the sauce and cooked an additional 15 minutes covered. Thanks for this simple weeknight recipe!

Five star recipe. I only changed one ingredient. I used 2 -8 ounce cans of crushed pineapple because that it what I had on hand. I did have to stray a little from the cooking directions. My meatballs did not get done when browning(my fault I cooked them to fast). After mixing up the sweet and sour sauce and cooking on low for a few minutes, I poured them over the meatballs that I still had in the frying pan, put the lid on and let them simmer until the meatballs were done. Then I removed the lid and let the sauce thicken. I served with rice and green beans. Next time I will double the sauce. We loved it over the rice.
