Description

These beans are a delicious and healthy snack. The most difficult part is waiting 7-10 days until they are ready.

Ingredients

  • 5 cups Dry Lupini Beans
  • 2 Tablespoons Salt (per 4 Cups Of The Soaked Beans)
  • Lots Of Water

Preparation

Dry Lupini beans can be difficult to find. I found them at a local Italian Market. They look like oyster crackers when dry.

You want to rinse them, then soak the beans overnight in a cold place adding enough water to cover the beans. The next day, drain them and then boil them for about 1 hour in fresh water. Then drain, cool, and cover with water again and let them sit for 7-10 days, CHANGING THE WATER ONCE A DAY. This step is very important because these beans are very bitter and can be toxic if they are not soaked properly. Fresh water each day is essential to draw out the bitterness. Put them in a cool place for this. I keep them in the basement; it doesn’t have to be a refrigerator. After about a week, test them to see if they are bitter. When they are no longer bitter, put them in smaller containers and add plenty of salt (about 2 Tablespoons for 4 cups of beans – or to taste). These beans more than double in size, so you will have more than you think.

You can use any amount of beans, I just said 5 cups because that is how they were packaged where I bought them. Eating them is fun because you pop the bean out of i’s shell, and only eat the inside.

You either love them or hate them. I ate these as a kid as a snack and recently discovered how they were made. My friend’s mother was Italian and made them for us. After trying a few different ways, this seems to be exactly the same taste as the ones she made. As I’m sure there are many different flavors you can add, this way brings back those fond memories for me…

I LOVE these beans. They are very popular in Brazil as an appetizer. They sell them at the grocery store in the olive bar area. My brother-in-law drains the water and then puts some soy sauce and lime juice on top and mixes it together to give them a little different taste when you are eating them. Thanks for the recipe because I’ve purchased them jarred in the states and they taste horrible. I will try to make them this way.
