Great for merchandise parties!
1. Preheat oven to 350F.
2. Place the ricotta, parmesan, and eggs in a bowl and whisk until smooth.
3. Roll out the puff pastry on a lightly floured surface until 1/8” thick.
4. Cut into 6” squares and place on greased baking sheets.
5. Spread the ricotta mixture over the pastry squares, leaving a ¾” border.
6. Place the leek and bacon on top of the ricotta mixture and brush with the butter.
7. Sprinkle with thyme, salt, and pepper.
8. Bake for 25 to 30 minutes or until the leek is golden.
