This is a popular Asian roadside snack. It can also be eaten as a filling snack in the evening.
1. Soak the gram or lentils for a few hours in water till they easily split between your fingers.
2. Throw out the water and put the gram in a blender. Add salt, red chili, cumin, and baking soda. Blend and make into a smooth puree.
3. Take out this paste and form medium-sized flattened balls. If the paste is too thin, add some gram flour.
3. Heat oil in a pan. When it is reasonably hot, deep fry the gram kebabs.
4. In a separate pan, put the apricots, plums and tamarind. Add sugar, salt, red chili, cumin. Add half of the water. Cook till a thick paste is formed.
5. Take this paste and separate the pits (if present) in any of the dry fruits. Now puree this paste to a smooth consistency.
6. Again put in the pan, add the remaining water and cook till a sauce-like consistency is formed.
Note: adjust the seasonings according to taste.
To serve:
1. Grate some carrots and white radish (mooli). Cut some onions in rings.
2. Put 2 ladoos in a plate, pour some whisked yogurt, then pour some chutney. Now add the grated veggies.
