Description

A kicked-up version of traditional hummus with the spiciness of chipotle peppers and tang of lime and the flavors of cilantro!

Ingredients

  • 1 can Garbanzo Beans (29 Ounce Can)
  • 2 cloves Garlic
  • 2 whole Chipotle Peppers In Adobo
  • 1 Tablespoon Adobo Sauce
  • ½ cups Tahini
  • ½ cups Cilantro
  • ¼ cups Lime Juice
  • 1 teaspoon Salt
  • ½ teaspoons Pepper
  • 1 teaspoon Sambal Oelek, Optional
  • ½ cups Olive Oil

Preparation

Put all ingredients except the olive oil in your food processor and pulse it just until all the garbanzo beans start to break up and the cilantro is mixing in nicely.

Turn your processor back on and drizzle about 1/4 cup of olive oil through the top feeder spout of your processor and into the bean mixture. When the consistency is correct, it should be similar to peanut butter. At that point, stop processing and serve!

I eat this on whole wheat or whole grain pita bread, cut into triangular wedges. Toast or warm the bread up briefly before adding the hummus.

For serving in a large serving bowl, you can also drizzle a tiny bit of olive oil over the top of the hummus and dot it with some Sambal Oelek (a ground chili paste found on the Asian aisle at your market).

This Hummus is incredible, I tried it this past weekend and loved it. Hummus has never met my taste expectations but this is great with all of the flavors. Can’t wait to take it to a party.

Oooh, that looks delicious! I must admit though, I adore cilantro! I eat it straight out of the garden while watering my plants. Hmm, did I just admit that? Anyways, thanks for the recipe!

This hummus recipe is the best I’ve tried! I loved all of the flavors and served it as a dip with a veggie tray. I think next time I’ll add more lime juice since I couldn’t quite taste it. Thank you for sharing.

I made this yesterday and it was soooo good. A nice twist on regular hummus. I added a little more lime juice as I like a lot of acid in my hummus, and used Sriracha as I was out of Sambal Olek. Everyone loved it, especially the smoky heat from the chipotles. I have to make more today! Thanks for a great recipe.
