Description

Nachos made with kettle chips instead of tortilla chips! Less than 5 minutes to make and gluten-free!

Ingredients

  • ½ bags (8 1/2 Oz. Size) Sea Salt Kettle Brand Chips
  • ½ bags (8 1/2 Oz. Size) Jalapeno Kettle Brand Chips
  • 2 cups Shredded Mexican Style Cheese, Or More As Needed
  • 2 cups Cooked Chicken, Cubed
  • 1 cup Black Beans From My Easy Black Bean Recipe
  • 1 cup Canned Corn, Drained
  • ¼ cups Canned Diced Green Chiles, Drained
  • ¼ cups Canned Diced Jalapenos, Drained

Preparation

Preheat oven broiler to high (ours is at 500ºF). Place chips in a single layer on a rimmed baking sheet. Sprinkle on a thin layer of shredded cheese.

Top with cooked chicken, black beans, corn, diced green chiles, jalapenos, and remaining cheese. Broil for about 90 seconds, or until cheese is melted and everything has warmed through.

Remove from the oven and top with additional toppings, if desired, such as avocado, cilantro, sour cream, salsa. Serve immediately!

OK, those sound awesome, and a creative use of Kettle chips. I wonder why I’ve never thought of that! I bet the jalapeno kettle chips would be really good.
